a serve of Tomato, Herb & Chickpea Soup ( page 56 )with a slice of wholegrain bread spread with low-fat cottage cheese
Snack
vegetable sticks with Tangy Thai Vegetable Dip ( page 43)
Dinner
a verve of Easy Tomato & Basil Risotto ( page 95 ), with a large salad sprinkled with some mixed seeds and almonds and low-fat mayonnaise
Dessert
a serve of Quick Apple Crunch ( page 131 ) served with some diet vanilla yoghurt
