Couscous with Fruit & Yoghurt
- ¼ cup couscous
- ¼ cup boiling water
- ½ cup rolled oats
- 2 cups diet fruit yoghurt
- ½ cup chopped dried fruit
- fresh fruit to serve
Prepare this dish the night before.
Place couscous in a bowl and pour over boiling water. Stir with a fork and let stand, covered, for lO minutes.
Combine oats, yoghurt and dried fruit. Fluff couscous with a fork, then add to oats mixture and mix well. Cover and refrigerate overnight.
Serve with fresh fruit.
