Grilled Curry Marmalade Chicken
- ½ cup marmalade (sugar-free)
- ½ cup French mustard
- 1½ tablespoons honey
- 1½ teaspoons curry powder
- 2 teaspoons lemon juice
- 4 × 125 g chicken breast fillets, skin and fat removed
Place marmalade, mustard, honey, curry powder and lemon juice in a small saucepan. Simmer gently for 5 minutes, stirring constantly. Allow to cool.
Brush chicken pieces on all sides with marmalade mixture. Refrigerate for at least 1 hour. Preheat a grill plate or barbecue and cook chicken over medium heat. Serve with salad and rice if desired.
