Barbecue Ginger & Garlic Chicken
- 1 cup plain non-fat yoghurt
- 2 teaspoons finely chopped fresh ginger
- 1 tablespoon crushed garlic
- 1½ teaspoons chilli powder
- ½ teaspoon salt
- 8 x 125 g chicken breast fillets, skin and fat removed
Combine yoghurt, ginger and garlic. Add chilli powder and salt and mix well. Place chicken in a bowl and pour yoghurt mixture over chicken to coat. Cover and refrigerate for at least 2 hours.
Preheat a grill plate or barbecue. Place chicken on grill 10 cm from heat. Grill for 4-5 minutes each side or until cooked, evenly browned and firm to touch. Serve with salad if desired.
