Almond, Cherry & Lemon Baked Apples
- 6 medium Granny Smith apples, cored
- 1 cup drained pitted morello cherries (available in jars in supermarket)
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- lemon essence
- 3 tablespoons mixed peel
- ½ cup water
- 1 teaspoon almond essence
- extra cinnamon to garnish
Preheat oven to 200~C. Peel top third of apples and place in a small baking dish.
Combine cherries, 3 tablespoons sugar, cinnamon, a few drops of lemon essence, 2 tablespoons mixed peel, water and almond essence in a small bowl.
Fill each apple with mixture, pushing as much as possible into holes. Sprinkle with remaining peel, sugar and extra cinnamon.
Bake for 35 minutes, rotate each apple and cook for a further 10 minutes. Serve with diet vanilla yoghurt if desired.
