Lemon Cheese-filled Pastry Baskets with
Mixed Berries
- 3 sheets filo pastry
- 2 tablespoons non-fat plain yoghurt
- 1 cup Iow-fat cottage cheese
- 1 small banana, chopped
- 1 teaspoon grated lemon zest
- 1 ½ tablespoons lemon juice
- 3 teaspoons honey
- ¼ teaspoon almond essence (optional)
- 3 dates, finely chopped
- 1 cup mixed berries to garnish
Preheat oven to 160?.
Lay a sheet of pastry on a work surface and brush lightly with yoghurt, Fold in half, then half again into a rectangle. Cut into halves. Repeat with remaining sheets, This will give you 6 pieces. Carefully press into 6 non- stick muffin tins, scrunch up edges and lightly brush again with yoghurt.
Bake for 12-15 minutes until crisp and a gold colour, Remove carefully from tins and transfer to a wire cake rack to cool.
Meanwhile, place cottage cheese, banana, lemon zest, lemon juice, honey and almond essence in a food processor and process until smooth. Stir dates through mixture.
Spoon filling into each basket just before serving. Garnish each with ¼ cup mixed berries.
