Banana Yoghurt Mousse Pie
- Base
- 1 ¼ cups Nutra-Bites (Dick Smith)
- 1/3 cup cornflake crumbs
- 2 tablespoons apple juice concentrate*
- Filling
- 4 medium bananas, roughly chopped
- 1 cup diet vanilla yoghurt
- 1 cup skim milk powder
- 2 egg whites, stiffly beaten
- sliced strawberries to serve
- extra banana slices to serve
Line a round 23 cm pie dish with plastic food wrap. Make sure the surface is as smooth as possible.
Place Nutra-Bites in a food processor and process until crumbly. Add cornflake crumbs and apple juice concentrate and process again, scraping down the sides, until mixture forms a grainy texture. Use fingertips to gently press mixture into prepared pie dish. Cool and place in freezer to firm.
Place bananas, yoghurt and skim milk powder in a food processor and process until smooth. Transfer to a mixing bowl and gently fold through egg whites.
Pour mixture into prepared base and refrigerate until set and chilled. Decorate with strawberries and extra slices of banana.
