Banana Caramel Pudding
- 1/3 cup skim milk powder
- 1 cup diet caramel topping (e.g. Coffee's)
- 1 1/3 cups water
- 2 teaspoons gelatine
- ½ teaspoon coconut essence
- 1 medium banana
Combine skim milk powder, topping, water, gelatine and essence in a medium saucepan. Bring to a boil, stirring to dissolve gelatine and let boil for 30 seconds.
Remove from heat and pour immediately into a suitable serving bowl. Peel and slice banana and mix evenly through mixture. Allow to cool, then refrigerate to set.
