Tangy Thai Vegetable Dip
- 1 cup broccoli florets, chopped
- 1 cup Iow-fat cottage cheese
- 1 teaspoon crushed garlic
- 4 spring onions, finely sliced
- ½ small red chilli, finely chopped
- 1½ tablespoons lime juice
- 1 tomato, seeded and diced
- 4 tablespoons chopped fresh coriander
- ½ teaspoon salt
- freshly ground black pepper
Steam or microwave broccoli until tender. Drain. Place in a food processor with cottage cheese and process until smooth.
Stir through remaining ingredients. Season to taste with pepper. Place in a bowl and serve with pita bread or vegetable sticks.
