Carrot & Coriander Dip
- 3 medium carrots, chopped
- 2 small potatoes, chopped
- 1 small onion, chopped
- 1 teaspoon crushed garlic
- 1½ teaspoons ground coriander
- 2 tablespoons finely chopped fresh coriander
- I teaspoon ground cumin
- 2 tablespoons lemon juice
- Salt
Steam, boil or microwave carrot, potato and onion until tender. Drain thoroughly and pat dry.
Place in a food processor with remaining ingredients and process until smooth, Season to taste with salt. Place in a bowl and serve with pita bread or vegetable sticks.
