Quick Easy Pizzas

pita bread makes the perfect quick and easy Iow-fat base for pizzas. Grill one side lightly (watch closely as they can burn easily) and then add topping. Place back under grill and cook until hot. Try some of these unusual Iow-fat topping combinations:
  • Spread base with a mixture of equal part fruit chutney and seeded mustard. Cover with chopped rocket leaves or baby spinach leaves and top with dollops of Iow-fat cottage cheese. Sprinkle with freshly ground nutmeg, salt and freshly ground black pepper.
  • Spread base with a mix of Iow-fat cottage cheese, grated lemon rind, squeeze of lemon juice, chopped fresh or dried dill, chopped capers, slices of smoked salmon and fresh steamed asparagus.
  • Combine some chilli sauce and tomato paste and spread over base. Top with some shredded cooked chicken, fresh coriander and chopped spring onions. Season with salt and freshly ground black pepper.
  • Spread base with Iow-fat hummus. Top with chopped fresh mint, sliced red onion, chopped green capsicum, dollops of Yoghurt Cheese and tomato paste. Sprinkle with ground coriander and ground cumin.
  • Combine 2 tablespoons non-fat plain yoghurt with 1 teaspoon sweet chilli sauce and spread over base. Top with pieces of precooked tandoori chicken and a few chopped cashew pieces.
  • Combine Iow-fat mayonnaise with chopped capers, thinly sliced spring onion and some dried rosemary. Spread over base and top with corn kernels and thick slices of tomato. Drizzle with extra mayonnaise mixture.
  • Spread base with cooked mashed pumpkin and top with freshly ground nutmeg, chopped fresh sage leaves, salt and freshly ground black pepper.
  • Combine tomato paste with some cottage cheese and spread over base. Top with chopped capsicum, thin slices of cooked sweet potato and sliced artichoke. Season to taste with salt and freshly ground black pepper.
  • Spread base with Dijon mustard and top with finely chopped spring onions, very thick slices of tomato and chopped fresh basil. Season with salt and freshly ground black pepper.
