Crispy Oven-fried Chicken
- 3 teaspoons barbecue seasoning (e.g. Masterfoods)
- 2 cups cornflake crumbs
- 1 cup Iow-fat cottage cheese, puréed
- 4 x 125 g chicken breast fillets, skin and fat removed
Preheat oven to 200?. Line a non-stick baking tray with baking paper.
Place barbecue seasoning and cornflake crumbs in a large plastic freezer bag and shake to combine. Place pureed cottage cheese in a bowl.
Dry each breast fillet with paper towel. Coat with cottage cheese and place individually in plastic bag. Shake well and press crumbs into surface of each fillet to ensure they are well coated.
Place fillets on baking tray and bake for 35-40 minutes, or until golden brown. Serves 4
