Chicken Noodles with Green Beans
- 240 g chicken breast fillet, skin and fat removed
- ¼ cup fat-free chicken stock
- ½ teaspoon ground coriander
- 1 large brown onion, chopped
- 3 tablespoons soy sauce
- ½ cup mirin*
- 2 tablespoons hoisin sauce*
- 2 cups frozen chopped green beans, thawed
- 3 cups cooked spaghetti
Cut chicken into bite-sized cubes and set side. Heat stock and coriander in a non-stick wok over medium-high heat for 1 minute. Add onion, lower heat and stir over medium heat for 2 minutes.
Add chicken and cook, tossing for 4 minutes or until lightly browned. Add a little water if necessary to prevent sticking.
Add soy sauce, mirin, hoisin sauce, beans and spaghetti, and cook for 3 minutes or until heated through. Serve accompanied with a salad if desired.
