Savoury Rice (Microwave)

  • ½ cup basmati rice
  • ¾ cup water
  • ½ teaspoon vegetable stock powder
  • 1 teaspoon garlic salt
  • ½ cup finely cut carrot strips
  • 3 tablespoons finely chopped red onion
  • 1 teaspoon dried parsley
  • 1 teaspoon dried mixed herbs
  • ¼ cup chopped red capsicum
  • ¼ cup chopped green capsicum
  • ¼ cup tinned corn kernels, drained
  • ½ cup finely diced zucchini
Place rice, water, stock powder and garlic salt in a large microwave dish (preferably one designed for cooking rice). Cover and cook on HIGH for 4 minutes.
Stir and add carrots, onion, parsley and herbs and cook for a further 2 minutes.
Add remaining ingredients on top and cook on MEDIUM-HIGH for 2 ½ minutes. Stir and stand for 5 minutes covered.
Serves 4 as a side dish or 2 as a main dish. Per serve (4): Kilojoules: 492 Calories: 118
