Savoury Rice (Microwave)
- ½ cup basmati rice
- ¾ cup water
- ½ teaspoon vegetable stock powder
- 1 teaspoon garlic salt
- ½ cup finely cut carrot strips
- 3 tablespoons finely chopped red onion
- 1 teaspoon dried parsley
- 1 teaspoon dried mixed herbs
- ¼ cup chopped red capsicum
- ¼ cup chopped green capsicum
- ¼ cup tinned corn kernels, drained
- ½ cup finely diced zucchini
Place rice, water, stock powder and garlic salt in a large microwave dish (preferably one designed for cooking rice). Cover and cook on HIGH for 4 minutes.
Stir and add carrots, onion, parsley and herbs and cook for a further
2 minutes.
Add remaining ingredients on top and cook on MEDIUM-HIGH for 2 ½ minutes. Stir and stand for 5 minutes covered.
Serves 4 as a side dish or 2 as a main dish.
