Zucchini Herb Mix (Microwave)
- 1 small zucchini, chopped
- 1 tablespoon chopped capers
- ¼ teaspoon dried oregano
- 1 teaspoon lime juice
- ½-1 teaspoon soy sauce
- 1 teaspoon chopped mint leaves
Place zucchini in a microwave-proof casserole dish. Cover and cook for 6 minutes on HIGH or until tender. Add capers, oregano, lime juice, soy sauce and mint and microwave for a further 2 minutes on HIGH.
