French Onion Pasta Salad
- 250 g penne, cooked and cooled
- 1 medium carrot, cut into thin strips
- 1 stick celery, thinly sliced
- ¼ cup sliced mushrooms
- ½ small red onion, finely chopped
- 6 cherry tomatoes, halved
- Dressing
- 1½ tablespoons French Onion Soup Mix (Continental)
- 1 × 200g tub non-fat plain yoghurt
- ½ teaspoon finely chopped fresh parsley
Place cooked pasta in a large bowl, add vegetables and mix well. Combine dressing ingredients and pour over salad.
