French Onion Pasta Salad

  • 250 g penne, cooked and cooled
  • 1 medium carrot, cut into thin strips
  • 1 stick celery, thinly sliced
  • ¼ cup sliced mushrooms
  • ½ small red onion, finely chopped
  • 6 cherry tomatoes, halved
  • Dressing
  • 1½ tablespoons French Onion Soup Mix (Continental)
  • 1 × 200g tub non-fat plain yoghurt
  • ½ teaspoon finely chopped fresh parsley
Place cooked pasta in a large bowl, add vegetables and mix well. Combine dressing ingredients and pour over salad.
