Bean & Vegetable Mix with Cinnamon & Mint (Microwave)
- 1 tablespoon mint sauce
- 1 medium carrot, chopped
- 1 medium onion, chopped
- 2 tablespoons chopped raisins
- ¼ teaspoon ground cinnamon
- ¼ teaspoon paprika
- 6 mushrooms, sliced
- 1 medium zucchini, cubed
- 1 x 300 g can white beans, rinsed and drained
Combine mint sauce, carrot, onions, raisins, cinnamon and paprika in a microwave-proof dish. Cover and cook for 3 minutes on HIGH. Add remaining ingredients and cook for a further 5 minutes on HIGH.
