Potatoes with Yoghurt, Lime & Mango Dressing

  • 4 medium red-skinned potatoes (desiree or pontiac)
  • Yoghurt, Lime & Mango Dressing
  • 1 cup non-fat plain yoghurt
  • 2 tablespoons hot mango chutney
  • 2 kaffir lime leaves*, finely shredded
  • 1 tablespoon chopped fresh coriander
  • 1 teaspoon lime juice
  • ½ teaspoon ground coriander
  • 1 tablespoon chopped fresh mint
  • extra coriander to garnish
Boil, steam or microwave potatoes until tender. Cut into wedges and place in a serving bowl.
Combine dressing ingredients and mix well. Drizzle dressing over potatoes. Garnish with extra coriander and serve.
