Potatoes with Yoghurt, Lime & Mango Dressing
- 4 medium red-skinned potatoes (desiree or pontiac)
- Yoghurt, Lime & Mango Dressing
- 1 cup non-fat plain yoghurt
- 2 tablespoons hot mango chutney
- 2 kaffir lime leaves*, finely shredded
- 1 tablespoon chopped fresh coriander
- 1 teaspoon lime juice
- ½ teaspoon ground coriander
- 1 tablespoon chopped fresh mint
- extra coriander to garnish
Boil, steam or microwave potatoes until tender. Cut into wedges and place in a serving bowl.
Combine dressing ingredients and mix well. Drizzle dressing over
potatoes. Garnish with extra coriander and serve.
