Apple Cinnamon Sauce
- ½ cup unsweetened apple juice
- ½ teaspoon cornfiour
- 1 small banana, mashed
- ½ cup chopped sultanas
- 2 medium sweet red apples, peeled and chopped
- ½ teaspoon ground cinnamon
Combine a little apple juice with cornflour in a medium-sized saucepan and stir over a medium-high heat. Add remaining ingredients. Bring to a boil, reduce heat and simmer gently until apples are tender.
Serve warm or chilled over pancakes, muffins or Iow-fat yoghurt or ice cream.
