Banana Berry Sauce
- ½ cup unsweetened apple juice
- 1 teaspoon cornflour
- 2 medium ripe bananas, mashed
- 1 cup chopped mixed berries
- 1/8teaspoon mixed spice
- apple juice concentrate* to sweeten, if desired
Combine apple juice and cornflour in a medium saucepan and stir over medium-high heat. Bring to a boil. Reduce heat and simmer, stirring until it thickens slightly.
Add banana, berries and mixed spice and heat through. Add a little apple juice concentrate to sweeten if desired. Serve over pancakes or Iow-fat ice-cream.
