Mayonnaise
- 300 g Iow-fat cottage cheese
- 1½ tablespoons white vinegar
- ¼ teaspoon salt
- 2 heaped teaspoons Dijon mustard
- 1 tablespoon lemon juice
- 3 teaspoons apple juice concentrate*
- 2 tablespoons skim milk
- freshly ground black pepper
Place cottage cheese in a food processor and process until smooth.
Add remaining ingredients and process until combined,
Store in a sealed container in refrigerator. Makes 1 cup
