Tuna and Macaroni Supreme (Microwave)

  • 1 onion, chopped
  • ½ small red capsicum, chopped
  • ½ cup corn kernels
  • ¾ cup chopped celery
  • 1 cup chopped tomato
  • 1 x 425 g can tuna in springwater, drained and flaked
  • 1 tablespoon spicy Italian seasoning (e.g. McCormick's)
  • 1 x 420 g can creamed corn
  • 1 tablespoon white vinegar
  • 2 cups cooked macaroni
  • salt and freshly ground pepper
  • ½ cup skim milk
  • 3 heaped tablespoons cornflour
  • ½ cup non-fat plain yoghurt
Combine onion and 1 teaspoon of water in a large microwave-proof casserole dish. Cover and cook for 4 minutes on HIGH. Stir.
Add capsicum, corn kernels, celery and tomato. Cook for 5 minutes on HIGH. Stir through tuna, seasoning, creamed corn, vinegar and macaroni. Season with salt and pepper. Cook for a further 5 minutes on HIGH.
In a microwave jug, add a little milk to cornflour to make a paste. Stir in remaining milk and yoghurt. Microwave on HIGH for 1-2 minutes until it thickens. Check after 1 minute. Add to tuna mixture.
Reheat 4-5 minutes.
