Tuna and Macaroni Supreme (Microwave)
- 1 onion, chopped
- ½ small red capsicum, chopped
- ½ cup corn kernels
- ¾ cup chopped celery
- 1 cup chopped tomato
- 1 x 425 g can tuna in springwater, drained and flaked
- 1 tablespoon spicy Italian seasoning (e.g. McCormick's)
- 1 x 420 g can creamed corn
- 1 tablespoon white vinegar
- 2 cups cooked macaroni
- salt and freshly ground pepper
- ½ cup skim milk
- 3 heaped tablespoons cornflour
- ½ cup non-fat plain yoghurt
Combine onion and 1 teaspoon of water in a large microwave-proof
casserole dish. Cover and cook for 4 minutes on HIGH. Stir.
Add capsicum, corn kernels, celery and tomato. Cook for 5 minutes on HIGH. Stir through tuna, seasoning, creamed corn, vinegar and macaroni. Season with salt and pepper. Cook for a further 5 minutes on HIGH.
In a microwave jug, add a little milk to cornflour to make a paste. Stir in remaining milk and yoghurt. Microwave on HIGH for 1-2 minutes until it thickens. Check after 1 minute. Add to tuna mixture.
Reheat 4-5 minutes.
