Baked Microwave Fish
- ½ cup dry breadcrumbs
- 1 tablespoon seasoning of choice (Cajun, Italian, hai)
- 2 x 175 g firm white fish fillets (e.g. cod)
Combine breadcrumbs with seasoning in a plastic bag. Add fish to bag and toss, pressing to coat evenly with breadcrumbs.
Place fish on a microwave-proof roasting rack. Cover with plastic wrap and cook on HIGH for 5-7 minutes, or until centre of each fillet flakes easily when tested with a fork.
