Grilled Fish in Ginger & Spices
- 4 x 150 g firm white fish fillets (e.g. cod)
- coriander leaves to garnish
- Marinade
- 2 teaspoons ground cumin
- 1½ teaspoons turmeric
- 1 tablespoon freshly grated ginger
- 1 teaspoon crushed garlic
- salt and freshly ground black,pepper
- 2 tablespoons lime juice
Combine marinade ingredients in a large dish and season with salt and pepper. Place fish in marinade and turn to coat. Cover and refrigerate for at least 1 hour.
Line a grill plate or grill pan with foil and spray very lightly with vegetable oil spray.
Cook fillets on the grill plate for 4 minutes each side. Serve immediately, garnished with coriander leaves.
