Spiced Creamy Tomato Soup
- 1 x 800 g can chopped tomatoes
- ½ cup water
- 1 small onion, chopped
- ½ teaspoon celery seeds
- ½ teaspoon dried parsley
- 1 teaspoon crushed garlic
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- salt and freshly ground black pepper
- 1 cup evaporated Iow-fat milk
- 2 drops liquid artificial sweetener (e.g. Sugarine)
- (optional)
Place all the ingredients except evaporated milk and sweetener
in a food processor or blender and puree.
Place in a saucepan and bring to a boil. Lower heat, cover and simmer gently for 5 minutes. Remove from heat. Add evaporated milk and sweetener and stir through. Return to Iow heat and gently heat through - do not allow to boil.
