Spiced Creamy Tomato Soup

  • 1 x 800 g can chopped tomatoes
  • ½ cup water
  • 1 small onion, chopped
  • ½ teaspoon celery seeds
  • ½ teaspoon dried parsley
  • 1 teaspoon crushed garlic
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • salt and freshly ground black pepper
  • 1 cup evaporated Iow-fat milk
  • 2 drops liquid artificial sweetener (e.g. Sugarine)
  • (optional)
Place all the ingredients except evaporated milk and sweetener in a food processor or blender and puree.
Place in a saucepan and bring to a boil. Lower heat, cover and simmer gently for 5 minutes. Remove from heat. Add evaporated milk and sweetener and stir through. Return to Iow heat and gently heat through - do not allow to boil.
