Spicy Lime Lentils with Couscous

  • 1 cup couscous
  • 1 teaspoon chilli paste
  • 1 teaspoon dried basil
  • ½ teaspoon dried coriander
  • 2 tablespoons finely chopped fresh ginger
  • 3 teaspoons vegetable stock powder
  • 6 kaffir lime leaves*, finely shredded
  • 3½ cups water
  • 1½ cups red lentils (300 g)
  • ½ cup frozen green beans
  • 1 tablespoon lemon juice
  • 1 cup fresh coriander leaves
Prepare couscous following directions on packet.
Place chilli paste, basil, coriander, ginger, stock powder, lime leaves and ½ cup water in a non-stick wok. Cook over medium heat for 2 minutes.
Add lentils, beans and remaining water to pan. Cook for 6-7 minutes or until lentils are cooked but still firm. Remove from heat and stir through lemon juice and coriander leaves. Serve with couscous.
