Spicy Lime Lentils with Couscous
- 1 cup couscous
- 1 teaspoon chilli paste
- 1 teaspoon dried basil
- ½ teaspoon dried coriander
- 2 tablespoons finely chopped fresh ginger
- 3 teaspoons vegetable stock powder
- 6 kaffir lime leaves*, finely shredded
- 3½ cups water
- 1½ cups red lentils (300 g)
- ½ cup frozen green beans
- 1 tablespoon lemon juice
- 1 cup fresh coriander leaves
Prepare couscous following directions on packet.
Place chilli paste, basil, coriander, ginger, stock powder, lime leaves and ½ cup water in a non-stick wok. Cook over medium heat for 2 minutes.
Add lentils, beans and remaining water to pan. Cook for 6-7 minutes or until lentils are cooked but still firm. Remove from heat and stir through lemon juice and coriander leaves.
Serve with couscous.
